Smile Please and Say Cheese, by Ian Rogerson. Ian came to Leicester from Bootle 38 years ago to manage Stafford's the Butchers. He was introduced to Stilton, which sparked a serious interest in cheeses. Finding out how the many varieties are made then became his quest.
